Release 0.5.0

Prepares the 0.5.0 release. It's a minor bump because it carries breaking changes.

Changes

• Remove the deprecated :finch_name option. This removes the option, Philter.Config.finch_name/1, the :finch_name key in the resolved config, and the deprecation warning. It has been ignored since 0.4.0 moved to the Mint transport. Callers still passing it get no warning now.
• Release 0.5.0. Bumps @version and the README install snippet, and moves the Unreleased changelog entries under [0.5.0] - 2026-10-04.

What's in 0.5.0

• Requires Mint ~> 1.11, which fixes six 2026 advisories (see Maintenance: Mint 1.11 security floor, dependency updates, drop Elixir <1.17 / OTP <27, docs pass #2).
• Breaking: needs Elixir ~> 1.17 on OTP 27 or later. Elixir 1.15 and 1.16 and OTP 26 are no longer supported.
• Breaking: :finch_name has been removed.
• Dropped the optional :phoenix dependency.

After merge

Push a v0.5.0 tag on main. The release workflow runs on it, tests and publishes to Hex.

Testing

mix ci passes locally (234 tests, plus format, credo and dialyzer). mix hex.build gives version 0.5.0, mint ~> 1.11 and Elixir ~> 1.17. mix docs builds without warnings.
