Triggered manually for version 2.1.0.

Bumps:

• package.json, package-lock.json
• packages/git-proxy-cli/package.json, including its pin on @finos/git-proxy

Once merged, cut release/2.1 from main per our release process in order to generate a GitHub draft release.
