ci: run old vim builds on ubuntu only - #680

macOS runners can no longer build vim < v8.2.5135: the old configure uses implicit-int main(), which modern clang/Xcode rejects (rhysd/action-setup-vim#38). Min versions 7.4.2119 and 8.2.1118 now test on ubuntu; macOS tests v8.2.5136, the oldest vim that builds there. Update docs/TESTING.md to match.
