The star history chart was broken because the upstream service stopped working reliably due to GitHub stargazer API restrictions. Point it at the maintained mirror so the chart renders again.

The star history chart in the README is currently broken because the old service no longer works reliably under GitHub's stargazer API restrictions. This switches it to the maintained mirror so the chart renders correctly again.
