docs(readme): use the webOS client's logo, drop the byline - #7

The header took the theme-adaptive `punktfunk-logo.svg` out of the app's public directory, which is not the lockup the webOS client's readme shows. `assets/logo/logo-sidebar.png` is that file, carried over as-is. The credit line named a person. The project's own readme carries no such line, and this repo is not an outside contribution, so what is left is the fact that mattered: the protocol lives in punktfunk-core and is pinned, not reimplemented here.
